Mixing cheese and chocolate is nothing new for Colombians. They have traditionally enjoyed this combination in the form of a hot drink called Chocolate Santa Ferreno or Chocolate Completo. It is usually made with a dark chocolate bar with flavors of cinnamon and cloves. The chocolate is whipped with milk/water in a bulb-shaped pot known as a chocolate. The whisk used is also specially made. Boil the mixture three times. A type of white cheese (queso campesino) is added to the hot chocolate before tasting it.
