Have you ever wondered how sugarcane gets transformed into the commonly used sugar and jaggery? A video going viral online showcases the easy steps to make jaggery from scratch. In the video shared by @lucymakes_, the blogger starts by cutting and peeling the sugarcane with the help of others. She then uses a large juicer to extract the juice. Once done, she strains the liquid and collects it in a large container. She then places a kadai-like container over the fire in an outdoor grill. Carefully pour the strained juice into the container and gently stir it with a spatula.

Using this method, she reduces the juices and simmers them for some time until they thicken. She explains that you need to boil the sugar water over medium-high heat and keep stirring. Once you remove it from the heat, she instructs you to stir the thick syrup until the bubbles subside. Once this is done, pour it onto a flat surface and let it cool. She is then filmed pulling the dried sugar apart with her hands. It seems to have a unique texture, which she likens to wood. Once you have small pieces, she explains that you can dissolve it in liquid when you want to use it. It can also be ground into a fine powder. The blogger says that this sugar can be used to make treats such as brown sugar tava and “the best chocolate chip cookies I’ve ever had.”

In the caption, the blogger revealed that she has actually made jaggery. She wrote, “There are lots of ways to make this but this is the way I did it using the tools I already had. And since I’m not removing the molasses from this sugar or crystallizing it, I’m actually making a traditional form of sugar called jaggery or gur. Jaggery is a very common ingredient used in cooking all over the world, especially in India and many other South Asian countries. If you’re wondering why it’s brown, it’s because it contains a significant amount of molasses (molasses comes from sugarcane). To make crystallized white sugar, you need to use a centrifuge to remove the molasses, which I’d definitely like to do someday.”
